What to Make in October — Cozy Fall Inspiration

Hello there, Reader!

In last week’s newsletter, I shared The 10 Recipes You Loved Most in September! If you missed it, you can catch up HERE

October is here — and with it comes that irresistible urge to slow down, stay in, and fill the kitchen with the warm, comforting aromas of fall.

This is my favorite time of year to cook. The markets are full of squash, pears, beets, and chestnuts, and there's nothing more satisfying than a bowl of something warm on a crisp October evening.

This week I'm sharing some of my favorite recipes to inspire your October kitchen — from cozy soups to fall salads, weekend breakfasts, and of course, a little something sweet!

🍲 Cozy Soups

Roasted Butternut Squash Soup
Velvety, naturally sweet, and deeply warming. This is the soup October was made for — and it freezes beautifully too!

Italian Egg Drop Soup
Aka Stracciatella! A classic Roman broth-based soup that comes together in just minutes. Simple, nourishing, and endlessly comforting.

🥗 Seasonal Salads

Warm Farro Salad
Nutty, hearty, and perfect for fall. Toss in roasted vegetables and a simple vinaigrette for a salad that's satisfying enough to be a meal!

Roasted Beet Salad
Stunning fall colors on a plate! Sweet roasted beets, peppery greens, and salty ricotta salata make this one as beautiful as it is delicious.

🥞 Weekend Breakfast

Easy Oatmeal Pancakes
Fluffy, wholesome, and ready in minutes. The perfect way to start a cozy October morning!

Cheese Muffins with Apples
Savory with a touch of sweetness, these apple and cheddar muffins are a wonderful autumn treat. Perfect alongside a bowl of soup too!

🍰 Fall Desserts

Pear Cake
Moist, tender, and full of fresh pear flavor. A simple Italian dessert that feels perfectly at home on an October table!

Pumpkin Biscotti
Warmly spiced and perfectly crunchy. Because pumpkin season deserves its own biscotti! Perfect with your morning coffee or an afternoon tea.

And if you spot fresh chestnuts at your local market or specialty store — they're just starting to appear! — don't miss my guide to Oven Roasted Chestnuts.

Nothing says October quite like the smell of chestnuts roasting!

READER REVIEW OF THE WEEK!

Thanks Maria, So delicious! My husband declared it restaurant quality. I made the balsamic sauce and threw some chicken thighs in the oven along with it. Will definitely make again 🙂
